10 Easy Leftover Meal Ideas to Reduce Food Waste

Cooking for one or two has its advantages, but judging exactly how much food to make isn't always easy.


A spoonful of vegetables here, half a chicken breast there, a little rice left in the pot - before long, the fridge can become a collection of containers containing things we're not quite sure what to do with.


And eating exactly the same dinner again tomorrow isn't always very appealing either.

Instead of thinking of leftovers as yesterday's meal, I like to think of them as a head start on the next one!


You've already done some of the work. Now you just need an easy way to turn what you have into something that feels a little different.

Here are 10 simple easy leftover meal ideas


1. Leftover Chicken → Make a Quick Wrap


A small amount of cooked chicken can go surprisingly far.


Chop or shred it, add a little mayonnaise or plain Greek yogurt and tuck it into a wrap with lettuce, tomato, cucumber or whatever salad vegetables you have.

Don't have wraps? Make a chicken sandwich instead.


Kitchen Granny tip: If there's only a tiny amount of chicken left, add grated cheese, avocado or chopped boiled egg to stretch the filling.


2. Leftover Rice → Make Easy Egg Fried Rice


Yesterday's rice can become today's quick lunch.

Heat the rice thoroughly with a handful of frozen peas or mixed vegetables, then add a cooked or scrambled egg. A splash of soy sauce gives it plenty of flavor without needing a long list of ingredients.


It's particularly handy when you have too little rice for another full serving but too much to throw away.


3. Leftover Vegetables → Add Them to an Omelette

That lonely spoonful of peas, a few mushrooms or half a portion of cooked spinach may not look like much sitting in a container.


Put them into an omelette and suddenly they have a purpose. Add a little cheese if you have some, and serve with toast.


This is one of my favorite ways to deal with those annoying little bits and pieces that otherwise tend to get pushed to the back of the fridge.


4. Leftover Potatoes → Make Crispy Potato Cakes


Cold cooked potatoes are far too useful to waste.

Mash them roughly, add a little grated cheese or some chopped cooked vegetables if you like, shape into small patties and cook in a lightly oiled frying pan until golden.

Serve with an egg, salad or baked beans and you've turned yesterday's side dish into an entirely different meal.


5. Leftover Pasta → Make a Quick Pasta Salad

There's no rule saying leftover pasta has to be reheated.


Toss cold pasta with chopped tomato, cucumber, cheese and a little salad dressing or olive oil.


Add tuna, chicken, chickpeas or a boiled egg if you'd like something more substantial.

This works especially well for lunch when you don't feel like cooking at all.


6. Leftover Cooked Meat → Top a Baked Potato


A little leftover beef, pork, chicken or mince probably isn't enough for another roast dinner - but it could be plenty for a potato.


Warm the meat thoroughly and spoon it over a baked potato. Add cheese, leftover vegetables or a spoonful of gravy if you have some.


Dinner done, with very little effort.

7. Half a Can of Beans → Make Beans on Toast


We recently talked about the half-a-can problem, and beans are a perfect example.


If you've used half a can in another meal, don't let the rest disappear into the fridge.

Warm them and pile them onto toast, perhaps with sliced tomato, avocado, cheese or an egg.


Sometimes the simplest meals are exactly what we need.


8. Leftover Bread → Make French Toast

Bread that's becoming slightly stale doesn't automatically belong in the bin.


Beat an egg with a splash of milk, dip the bread into it and cook it gently in a frying pan.

Top with banana, berries, yogurt or a little cinnamon.


Suddenly that forgotten bread has become breakfast. And if sweet French toast isn't your thing, make it savory with tomato and cheese instead.


This is a fave when my grandkids come over. And, I get them to help with the setting of the table and the serving, so we have a fun family bonding moment over French Toast!


9. Leftover Roast Vegetables → Turn Them Into Soup


A handful of cooked carrots, pumpkin, sweet potato, cauliflower or other vegetables can make the beginning of a very easy soup.


Add some stock and gently heat everything together before blending until smooth.


You don't need a huge pot. Make just enough for one or two servings.

Add toast on the side and you have a simple lunch that feels nothing like yesterday's vegetables.


10. A Little Bit of Everything → Make a Bits-and-Pieces Plate

This may be the easiest leftover meal of all.

You don't actually have to turn everything into a recipe.


Put a little chicken or cheese on a plate. Add leftover vegetables, a spoonful of hummus, some crackers or bread, perhaps a boiled egg and a few pieces of fruit.


I call this a bits-and-pieces plate! It clears several small leftovers from the fridge at once - and there's almost no cooking involved.

A Simple Leftover Habit That Helps


One of the biggest problems with leftovers isn't knowing what to make with them.

It's forgetting they're there.


Try keeping one small container or basket near the front of your fridge for foods that need using first.

When you're wondering what to make for lunch, look there before opening something new.


A Quick Word About Leftover Safety


Leftovers are only useful if they've been stored safely.


The USDA recommends refrigerating perishable leftovers within two hours of cooking and generally using cooked leftovers kept in the fridge within 3–4 days. Leftovers being reheated should reach 165°F (74°C).


Cooked rice also falls within the USDA's general 3–4 day refrigerated storage guidance.


If you're unsure how long something has been sitting in the fridge, don't take a chance.


Kitchen Granny tip: Write the day and date on your containers before putting them away. It saves having to play “Now, when did I cook this?” three days later.

Yesterday's Dinner Can Make Tomorrow Easier


Using leftovers isn't just about saving food. It can also mean less chopping, less cooking and less washing up.


And when you're cooking smaller meals, those little portions can be surprisingly useful.

So next time you find half a potato, a spoonful of vegetables or a small piece of chicken sitting in the fridge, don't immediately think:

There's not enough there to do anything with.

There probably is! Sometimes you just need to give it a different job!
